Two Crowd Pleasing Salmon Recipes

Happy Wellness Wednesday! As you have heard me say, I am definitely not a cook but we do try to make healthier choices during the week so I am always on the hunt for quick and easy recipes. While most of our meals consist of chicken or ground turkey, those can get old very quickly. Since we aren’t big red meat eaters (my son would probably be the exception to that), that leaves fish. I have never been a big seafood fan but I have slowly adapted over the years to some of the milder versions, including salmon.

Ingredients for both recipes

My mother-in-law gave us a quick and easy recipe that we have been making for over a year now. It is essentially 2 tablespoons of maple syrup mixed with 1 tablespoon of soy sauce to create the marinade. Her recipe calls for some dill on top but we usually skip that step and keep it simple. After pre-heating the oven to 425 degrees and wrapping the filets in foil, the cooking time is a total of 25 minutes with the last 5 minutes unwrapped.

While I enjoy this version, I am not typically a sweet person when it comes to my meal. I like to save that for dessert. Recently, I discovered the almond butter turmeric dressing from Trader Joes and have been using it as a marinade for my salmon. I like the mild taste and if I feel like it needs a little more flavor, I can add more on top after it cooks.

Two different variations to salmon but both are delicious, especially served over our usual brown rice and steamed broccoli. What can I say? I am a creature of habit when it comes to food.
