As I have mentioned before, I am definitely not any sort of chef or even a decent cook, however, with the right recipe, I am pretty good at following instructions. I have been in search of some new, simple recipes since our current rotation is experiencing some burnout. My sister-in-law suggested this simple meal from Hello Fresh that she found through one of our favorite bloggers, and of course, one of our favorite former Bachelorettes, Ali Fedotowsky. Since Ali is a working mom herself, I always love checking in to see what tips and tricks she has for the rest of us to help make our lives a little easier and get some food on the table for our family at night.
Since my house is full of picky eaters, I wasn’t sure how this would pan out but I am always game to try something at least once. After reading the recipe, it sounded simple enough so I added it to the meal plan for the week and grabbed the ingredients from my local Ralphs. Combining shrimp with some green beans and rice, it felt like a well balanced meal that seemed to fill everyone up too. I will admit that I think I added a bit too much ginger or maybe I just need to pull that ingredient back a little next time, but overall, the flavor was delicious with most of the family giving it a thumbs up.

Prep Time: 30 Minutes
Serves 4 People
Ingredients:
1 cup jasmine rice
4 unit Scallions
4 cloves of garlic
2 thumbs of ginger
1 jar Hoisin sauce
16 oz. Shrimp
2 Tbsp. Sesame seeds
2 units limes
12 oz. green beans
Preheat the oven to 400 degrees. In a small pot, bring 2 cups of water and a large pinch of salt to a boil. Trim the ends of the green beans. Trim, then thinly slice the scallions, keeping the greens and whites separate. Mince or grate the garlic. Peel and finely grate the ginger. Add the jasmine rice to the boiling water, cover, and reduce to a low simmer for 15-20 minutes, until tender.
Roast the green beans by tossing them on a baking sheet with a large drizzle of oil and a pinch of salt and pepper. Place in the oven for about 15 minutes, tossing halfway through cooking, until slightly crispy.
In a medium bowl, toss the shrimp, hoisin sauce, garlic, and half the ginger together until thoroughly combined. Season with salt and pepper.
Roast the sesame seeds by placing them in a large pan over medium heat. Toss for 2-3 minutes, until fragrant and slightly golden. Remove from the pan and set aside.
Heat a large drizzle of olive oil in the same large pan over medium heat. Add the scallion whites and remaining ginger and cook, tossing for 2-3 minutes, until soft and slightly golden. Transfer to the pot with the rice, stir to combine and cover.
With about 4 minutes left on the rice, add the marinated shrimp and a large drizzle of oil to the same pan over high heat. Cook, tossing for 2-3 minutes, until the shrimp are opaque and slightly charred on the outside.
Cut the lime into wedges. Serve the sesame shrimp on a bad of ginger-scallion rice with the crispy green beans to the side. Sprinkle with the scallion greens, sesame seeds, and serve with a lime wedge. Enjoy!
