As most of you know, I definitely do not claim to be a cook or chef of any sort. I am just a busy, working mom always in search of dinner hacks that are healthier and that maybe my picky kids will eat. I have been making this recipe for years to the point where we have had our moments of burn out but it is always a great staple in this house. I even make a larger batch of this chicken each year for our Halloween neighborhood pot luck because it so easy and can feed a lot of people.
Some of you likely already have this recipe in your rotation but if you don’t, I thought I would share the idea. If your family loves tacos, especially chicken tacos, it doesn’t get any easier. I start with 2-4 chicken breasts depending on how many people you are feeding and put them into the crock pot while frozen. I pour about 3/4 jar of medium red or green salsa over the chicken, turn the temp. to low for 6 hours and head out the door. One slight modification you can try is adding the chicken taco seasoning packet for some extra flavor.
Upon arriving back home from work, the house smells amazing and you have dinner ready to go. You may want to drain some of the excess water and salsa before slicing up the chicken and preparing to serve. Typically, we serve the chicken the first night with tortillas but lately I have been making a bowl that includes brown rice, black beans, sliced avocado, cheese and maybe a small splash of salsa on top. It is a slightly healthier version of the taco but also adds some additional protein.
The best part is I then take the remaining chicken, rice and beans and place them into smaller containers that I can take for lunch for the next 2-3 days. I just pack a half avocado and slice at work, heat up the rest and my protein packed taco bowl sustains me for the rest of the day.
Typically, I will enjoy with some of my favorite tortilla chips from Trader Joes and a small amount of green salsa if the chicken gets a little dry over night. With one healthy, easy dinner out of the way and lunches for a few days, this meal goes a long way. Enjoy!
